Double Chocolate Chip Brownies

Chocolate Brownies

Thanks to my seven year old, I recently discovered a new found love for chocolate brownies. That’s the thing about having a seven year old who loves to bake, you discover a whole new appreciation for desserts and sweet treats. This double chocolate chip brownies recipe is currently one of our favourite bakes so far this year, you just have to try it!

Makes 12 brownies

Preparation Time: 20 minutes

Cooking Time: 30 minutes

Ingredients
  • 100g Dark chocolate
  • 100g Milk chocolate
  • 250g Butter
  • 3 Eggs (large)
  • 90g Flour
  • 275g Caster sugar
  • 35g Cocoa powder
  • 100g Dark chocolate chips
  • 100g Milk chocolate chips
Method
  1. Preheat your oven to 180 degrees Celcius / 160 fan
  2. Break up the dark chocolate and milk chocolate into pieces and put them in a heatproof bowl (I use a normal bowl for this but you can also use a glass pyrex bowl or ceramic mixing bowl)
  3. Dice the butter and add it to the bowl
  4. Put the bowl of chocolate and butter over a pan of boiling water
  5. Once the chocolate and the butter have melted, mix them together until smooth, remove from the pan and allow to cool
  6. Add the caster sugar and eggs to a separate mixing bowl and whisk together until the eggs and sugar have doubled in volume
  7. Once the chocolate and butter mixture has cooled slowly fold it into the eggs and sugar so you don’t knock out the air (be patient, this step takes a little bit of time but is SO worth it)
  8. Sift and fold the flour and cocoa powder into the mixture
  9. Once everything is combined add the chocolate chips and fold
  10. Line your baking tray with parchment paper (for a little baking hack snip each corner of the parchment paper in the tin so you don’t get creasing) and add your delicious brownie mixture
  11. Add to the oven and bake for 30 minutes
  12. Once ready remove and leave to cool until slightly warm (the surface of your brownies should be a little bit cracked but not burnt)

These double chocolate chip brownies are most definitely enjoyed best fresh out of the oven and slightly warm, but they will stay pretty fresh for up to a week if you keep them in an air tight container. Yummy!
