Get Well Leek and Potato Soup

For the last three days the little lady has been at home, poorly from a lingering chesty cough. I hate seeing her so unwell and not herself. It’s even worse feeling like I can’t do much to help her, especially when she is still so young and helpless.

What I can do though is make sure that she is comfortable and feels comforted. I remember being young and poorly and feeling comforted by some of the little things that my parents did for me, I remember those things fondly and nostalgically.

So yesterday afternoon when I was home with her, I decided one of the most comforting things that I could do for my little lady was to make her some leek and potato soup. Its one of my favourite things to make. It’s quick and easy to whip up, super tasty and more importantly nutritious. I think it looks and smells pretty good too, so I wanted to share my own recipe for what I am now calling “Get Well Leek and Potato Soup”. I love this and hope others do too!

Makes: 4 Servings (simply multiply or half the ingredients if you need to make more or less!)

Preparation & Cooking Time: 30 mins


  • 1 clove of garlic
  • 2 leeks
  • 5 small/medium potatoes
  • A few stalks of thyme or a sprinkle of mixed herbs
  • Pepper
  • Vegetable or chicken stock
  • 400 ml milk
  • 100 ml double cream
  • A dollop of butter


  1. Peel, chop and boil the potatoes for approx 15 mins
  2. Heat some oil in a warm pan, add the chopped leek, butter and cook for 3-4 mins
  3. Strain the potatoes, add to the pan along with the chopped garlic and cook for a further 1 min
  4. Add the thyme or mixed herb and stock cube to the pan and stir
  5. Add the milk and simmer for 6 – 8 mins
  6. Add the cream, season with a sprinkle of pepper and simmer for a further 2 – 3 mins
  7. Remove from the heat, blend and serve with crunchy croutons or chunky bread
